Fried Rice with Chicken or Beef

Ingredients
For the Fried Rice:
- 3 cups rice (preferably long-grain)
- 4-5 cups chicken or beef broth
- 1 cup diced carrots
- 1 cup diced green beans
- 1/2 cup sweet corn
- 1/2 cup diced bell peppers (any color)
- 1/2 cup green peas
- 1 medium onion, chopped
- 2-3 tablespoons vegetable oil
- 2 teaspoons curry powder
- 1 teaspoon thyme
- Salt and pepper to taste
For the Fried Chicken or Beef:
- 1 lb (450 g) chicken pieces (or beef slices)
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- Vegetable oil for frying
Method
- Prepare the Chicken or Beef:
- Season the chicken or beef with paprika, garlic powder, salt, and pepper.
- Heat a few tablespoons of oil in a pan over medium heat.
- Fry the seasoned chicken or beef until golden brown and cooked through. Remove and set aside.
- Cook the Rice:
- Rinse the rice under cold water until the water runs clear.
- In a pot, add the broth and bring it to a boil. Add the rice, curry powder, thyme, and a pinch of salt.
- Cover and cook on low heat until the rice is tender and the liquid is absorbed (about 15-20 minutes).
- Once cooked, fluff the rice and set it aside.
- Make the Fried Rice:
- In a large pan or wok, heat 2-3 tablespoons of oil over medium heat.
- Add the chopped onions, carrots, green beans, and bell peppers. Sauté for 3-5 minutes until the vegetables are slightly tender.
- Add the green peas and sweet corn, stirring to combine.
- Add the cooked rice to the vegetables in the pan and mix everything well.
- Season with additional salt and pepper to taste, and cook for another 5 minutes, stirring frequently.
- Serve: Serve the fried rice alongside the fried chicken or beef, with additional vegetables if desired.
