Fried Rice with Chicken or Beef

Method

  1. Prepare the Chicken or Beef:
    • Season the chicken or beef with paprika, garlic powder, salt, and pepper.
    • Heat a few tablespoons of oil in a pan over medium heat.
    • Fry the seasoned chicken or beef until golden brown and cooked through. Remove and set aside.
  2. Cook the Rice:
    • Rinse the rice under cold water until the water runs clear.
    • In a pot, add the broth and bring it to a boil. Add the rice, curry powder, thyme, and a pinch of salt.
    • Cover and cook on low heat until the rice is tender and the liquid is absorbed (about 15-20 minutes).
    • Once cooked, fluff the rice and set it aside.
  3. Make the Fried Rice:
    • In a large pan or wok, heat 2-3 tablespoons of oil over medium heat.
    • Add the chopped onions, carrots, green beans, and bell peppers. Sauté for 3-5 minutes until the vegetables are slightly tender.
    • Add the green peas and sweet corn, stirring to combine.
    • Add the cooked rice to the vegetables in the pan and mix everything well.
    • Season with additional salt and pepper to taste, and cook for another 5 minutes, stirring frequently.
  4. Serve: Serve the fried rice alongside the fried chicken or beef, with additional vegetables if desired.
